  • In a food processor with a metal blade or a blender container, combine the beans, broth, salsa, and cumin. Process 1 minute, or until smooth.
  • Heat bean mixture in a medium saucepan over medium heat, until thoroughly heated.
  • To serve, ladle soup into 2 individual bowls. Spoon 1 tablespoon of sour cream on top of each; swirl gently. Sprinkle with green onions.

  1. Wow! What flavor!! I had leftover homemade salsa. All raw. I chopped it up with the black beans. Dumped it in small sauce pan, added Better Than Bullion beef broth, sprinkled more garlic powder and cumin over it giving it a good stir. It simmered close to 1/2 hour. Topped with finely chopped green onion and tbs of sour cream. I ate it as my main-meal supper! I really enjoyed this recipe using my own highly-seasoned salsa!
     
  2. We loved this soup! So simple to make and great flavor. I used a medium-hot salsa that gave it just a bit of bite. Also love that it is so high in fiber and uses ingredients I always have on hand. Will make this one often!

<p>I recently celebrated my 19th anniversary living in SW Florida. I moved here from Massachusetts, just north of Boston.
