Blushing Turkey and Cheese Sandwiches

- 4 French rolls, crusty
- 4 ounces goat cheese
- 1 (15 ounce) can bing cherries (Pitted Dark Sweet)
- 1⁄4 cup low-fat mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon fresh basil, chopped
- 8 ounces deli turkey, thinly sliced
- 2 cups baby spinach leaves
directions
- Slice rolls in half horizontally, leaving 1 long side attached.
- Evenly divide the cheese among the 4 cut bottom halves of each roll & spread evenly.
- In a bowl, combine chopped cherries, mayonnaise, mustard & basil, mixing well.
- Spread 3 to 4 tablespoons of this cherry mixture on the cut side of each top half.
- For each sandwich divide the turkey among the 4 sandwiches, layering it onto the cheese.
- Divide the spinach leaves among the 4 sandwiches.
- Serve immediately or keep refrigerated until ready to serve.

This was like Thanksgiving in a sandwich to me! The cherries had the sweet tart falvor that really reminded me of cranberries almost! I did use fat free mayo and low fat goat cheese and it still had a very decadent flavor! Thanks for a treat for lunch Syd! [Made for Holiday Tag March 2010] Quick update to say that I used French Tart's Recipe#340621 and cut two hearty thick slices for this sandwich! Yum :)
