  1. Heat skillet to medium and brown sausage.
  2. Drain sausage on a paper towel lined plate.
  3. In the same skillet that is greased from the sausage, heat to medium-high.
  4. add hash browns and cook them, (make sure they are in a single layer).
  5. Press the hash browns down with a spatula to compress.
  6. flip and cook until brown on both sides, set to the side.
  7. add 8 eggs, 1/4 cup water, minced garlic, and salt & pepper to taste to a large mixing bowl.
  8. Whisk until consistent.
  9. reduce heat to medium-low and scramble the eggs.
  10. lay out the tortillas, add sausage then shredded potatoes, then scrambled eggs, and top with cheese.
  11. fold and roll burritos.
  12. wrap in saran wrap then put all burritos into a freezer safe bag.
