  • Heat skillet to medium and brown sausage.
  • Drain sausage on a paper towel lined plate.
  • In the same skillet that is greased from the sausage, heat to medium-high.
  • add hash browns and cook them, (make sure they are in a single layer).
  • Press the hash browns down with a spatula to compress.
  • flip and cook until brown on both sides, set to the side.
  • add 8 eggs, 1/4 cup water, minced garlic, and salt & pepper to taste to a large mixing bowl.
  • Whisk until consistent.
  • reduce heat to medium-low and scramble the eggs.
  • lay out the tortillas, add sausage then shredded potatoes, then scrambled eggs, and top with cheese.
  • fold and roll burritos.
  • wrap in saran wrap then put all burritos into a freezer safe bag.
