- 24 frozen tart shells
- 1⁄2 cup raisins (optional)
- 1⁄4 cup margarine
- 1⁄2 cup brown sugar
- 1⁄2 cup simple syrup
- 1⁄2 teaspoon vanilla extract
- 1⁄4 teaspoon salt
- 1⁄8 teaspoon lemon juice
- 2 eggs
directions
- Preheat oven to 450°F Place raisins in small dish, cover with boiling water. Allow to soak until edges start to become white. Drain.
- Cream margarine and sugar. Add vanilla, syrup, salt, and lemon juice. Add eggs. Mix thoroughly.
- Place tart shells on baking sheet. Distribute raisins evenly amongst tart shells. Pour prepared mixture into shells, filling 2/3.
- Bake at 425F for 5 minutes. Reduce heat to 325F and bake for an additional 12-18 minutes. Cool on wire rack.
