Café Muse's Grilled Cheese Sandwich

- 1⁄2 tablespoon good quality butter, softened
- 2 slices bread (organic multigrain bread suggested, or your favorite)
- 1 slice havarti cheese
- 1 slice mozzarella cheese
- 1 slice Danish Fontina cheese
- 2 slices tomatoes
- honey, for drizzling from a squeeze bear bottle
- 1 teaspoon fresh basil, chopped, less if you're not a basil fan
directions
- Butter bread on one side with softened butter. Place in an oven-proof sauté pan large enough for 2 slices of bread, butter side down, over medium-low heat. Put mozzarella on one slice of bread and Fontina and Havarti on the other. Cook until golden on bottom and cheese begins to melt.
- Place tomatoes on the mozzarella side and a drizzle of honey on the Fontina/Havarti side. Slide pan under broiler for a few minutes to broil the tomatoes.
- Sprinkle basil as desired on top of the tomato, assemble sandwich, and serve.

I'm a transplant from Alabama now living in a St. Louis, MO suburb. After many years as a senior consultant, I had to have major surgery with a long recovery period, which is when I found your site. What a thrill!!

I rate the recipes I really love, which is why most of my ratings are high. So far I haven't encountered a recipe I didn't like where I didn't change something in the original, and I don't think it fair to give a low rating under those circumstances.
