Cajun Meatloaf With Sweet Sauce

"This one of my favorites as I serve this as a rule using alligator instead of ground beef. In french its called Le Pain acadien de Viande avec la Sauce de Poivre Douce. Enjoy"

  • 1 tablespoon oil
  • 1 cup finely chopped sweet red pepper
  • 12 cup finely chopped sweet green pepper
  • 12 cup finely chopped onion
  • 14 teaspoon salt
  • 4 slices white bread, torn
  • 12 cup skim milk
  • 1 lb ground beef
  • 14 lb ground pork
  • 12 cup dried breadcrumbs
  • 12 cup chili sauce, in the bottle
  • 1 egg
  • 1 teaspoon hot pepper sauce
  • sweet hot pepper sauce
  • 1 tablespoon oil
  • 1 cup diced sweet red pepper
  • 1 cup diced sweet green pepper
  • 12 cup finely chopped onion
  • 14 cup water
  • 12 teaspoon salt
  • 14 cup apple cider
  • 14 cup packed brown sugar
  • 1 teaspoon whole mustard seeds

  • Meatloaf: Heat oil in large skillet over medium-high heat. Add red pepper, green pepper, onion and salt; cover and cook on low heat until very tender, about 8.5 minutes. Remove from heat and cool slightly.
  • Heat oven to 350 degrees F. Grease a 9 x 5 x 3-inch loaf pan.
  • Mix bread, and milk in a large bowl; let stand a few minutes to soften. Add beef, pork, bread crumbs, 1/2 cup Chile Sauce , egg, hot pepper sauce and sweet red pepper mixture; toss easy to coat. Spoon and dab into prepared loaf pan. Bake for about 1 hour,check to be sure loaf is done. Let stand 10 minutes before serving.
  • Top each serving with a Tlbs of Sweet Pepper Sauce and serve.
