  1. In a large skillet, cook bacon until crispy. Drain on paper towels, crumble and set aside.
  2. Meanwhile toss avocado with 2 tablespoons lemon juice.
  3. In a medium bowl, toss chicken with celery, crumbled bacon, blue cheese dressing, chives and remaining lemon juice.
  4. Mound salad on lunch plates lined with lettuce. Arrange tomato and avocado in a sunburst around chicken salad. Garnish with olives.
