- 1 onion, chopped
- 1 garlic, crushed
- 4 slices prosciutto
- 2 eggs
- 300 ml cream
- salt and pepper
- 1⁄2 cup parmesan cheese
- 500 g pasta
directions
- Sauté onion, garlic and prosciutto.
- Mix cream, eggs and S&P together.
- Mix all together and bring to boil. Add parmesan and stir until melted.
- Mix in cooked pasta and serve with parmesan.

Delicious! I also didn't have bacon, but I had 500g of smoked chicken, and that worked beautifully. My only problem was my stupidity, I used a Cast-Iron frying pan, which I have just bought, I've never used a real one before, I thought that would be awesome for the sauteeing, which it was, but really bad one I added the egg, it sped up the curdelling process sooooo fast. I will try again some time once I have my brain in gear and I'm not listening to a crying baby :P The baby loved it too with his baby noodles :D

Extremely good. Like the other commenter said, do -not- boil this for too long, because the sauce can and will curdle -very- easily. I would bring it almost to a boil, then add the cheese and turn off the fire to maintain the creaminess. However, a little bit of excess cream helped when the egg curdled.
