  1. In a large bowl, place the celery and red onion.
  2. In a seperate bowl, whisk together olive oil. lemon juice, Dijon, sugar, salt and pepper.
  3. Pour dressing mixture over celery and onion.
  4. Sprinkle with chopped mint and parsley.
  5. Toss to combine well.
  6. Chill for about 1 hour before serving.
