Cheeseburger and Fries Casserole

ingredients
- 1 lb lean ground beef
- 1 small onion, chopped
- 1⁄2 teaspoon garlic powder
- 1⁄2 teaspoon black pepper
- 1⁄2 teaspoon salt
- 1 (10 1/2 ounce) can cream of mushroom soup
- 1 (10 1/2 ounce) can cheddar cheese soup
- 1 lb frozen french fries
directions
- Brown the ground beef with the onion, garlic powder, pepper and salt.
- Mix in the cream of mushroom soup.
- Place meat mixture in a casserole dish.
- Top with french fries.
- Top with cheddar cheese soup.
- Bake at 400 for 15 to 20 minutes or until the french fries are golden brown and the casserole is heated through.
- Great served with ketchup and mustard drizzled on top.
- Note: If you family likes mushrooms and/or green peppers they are a good addition to the meat mixture.

BIG hit for our family!!! We used fiesta cheese soup (that's the only kind I had) and I spooned in about 1/2 lb of frozen green beans with the meat and soup mixture. I put the cheese soup under the fries (spicy wedges as that's what we had) like other reviewers suggested and sprinkled cheddar on top for the last 5 minutes of cooking too. Dinner was hot and ready in 20 minutes! :) Very good flavor!

My husband loves Tater Tot Casserole, but I am not a lover of tots. I thought that this would be a good compromise, and he wasn't disappointed. Like another reviewer, I put the cheese sauce under the fries to keep them from being soggy. Leftovers rewarmed well for lunch. This is not gourmet, but a good solid meal to be served with a veggie and salad.

I am a fan of the childrens books about Winnie the Pooh. I especially love TIGGER. Actually I love just about everything Disney. One of the things I miss most from living in Florida was getting to go to Walt Disney World anytime I wanted to. It really is one of the happiest places on earth.
I love to cook and am always trying a new recipe. I also like to garden, but find it quite a challenge here in Wyoming with our long winters and dry windy short summers. I like to experiment with herbs and spices.
During the summer of 2006 I was diagnosed with PCOS and as such realized that the excess weight I was carrying was quite literally killing me. I found SparkPeople.com and was able to lose over 75 pounds now with not too much more to go. My cooking has changed some since then in that I still cook the same foods I just go about it in a much healthier way. Taste is paramount to me - so if it doesn't taste good then why bother! :)
