Cheesy Rolls

"From Australian Super Food Ideas May 2007. A kid friendly recipe for the children to make (under supervision). A cross between a damper or a scone, Americans may refer to them as a biscuit and serve with a soup or stew. Due to recent finger problems I was not able to do step 3 so used a food processor, have posted to step 3."

  • Preheat oven to 200 degree celsius.
  • Lightly grease a large baking tray.
  • Sift 2 cups of flour and the salt together, add butter and using your fingertips, rub butter into flour until mixture resembles breadcrumbs OR put sifted flours in food processor, add cubed butter and process till it resembles breadcrumbs.
  • Add cheese, ham and parsley, stir with a wooden spoon until combined.
  • Make a well in the centre of the dry ingredients and pour milk into well, using a flat blade knife stir until mixture starts to come together (don't overmix, or rolls will turn out tough).
  • Sprinkle a little of the 1/4 cup of flour over the workbench, turn dough out onto bench and knead gently until dough comes together.
  • Shape dough into a 20 cm disc. Divide dough into 6 pieces and pull apart. Roll each piece into a ball.
  • Place on prepared tray, allowing room for spreading.
  • Sprinkle lightly with remaining flour and using knife score a 1 cm deep cross on each roll top.
  • Bake for 15 to 20 minutes or until golden (rolls should sound hollow when tapped on base.

  1. Will make again! I omitted ham as I didn't have any and doubled the cheese as recommended in previous comments. I used Colby instead of cheddar. Served with Recipe#35411

  2. Yum! These were really nice. My kids had them for lunch today and they all gave them a big thumbs up (even the fussy one) :) This is a great wee recipe that is so easy and I will definately keep it up my sleeve. (i used the food processor....I'm lazy :P )

  3. Mmmmmmmmmm! Pat, these rolls are soooooooo yummy! They have a crunchy outside and a wonderfully soft, fluffy interior. The flavour is rich and the parsley complements the cheese nicely. I am a vegetarian, so I left out the little ham that was in there and instead doubled the cheese. Decadent! :) These are great snacks and would be lovely with a soup, too. The recipe is very clear and the dough easy to work with (I wouldnt have needed all the liquid, though). THANKS SO MUCH for sharing these treats with us, they are sure to be made again! Made and reviewed for Potluck Tag July 09.

  4. My family loved these. We used cheddar for the cheese. The dough didn't hold together very well for me...it needed an extra tablespoon or two of liquid. But otherwise it was a simple, tasty, recipe that's a keeper for us.

  5. Delicious, simply delicious. I used parm cheese with the ham and the biscuits are wonderful. Simple to make, theses will be great sides or to use as sandwich bread (I made mine into 3 inch circles). Thanks so much for a real keeper!

With the demise of the forums and with no more interaction on site with what was a great community and it was a pleasure to get to know so many of you over the years and to have had the privilege of meeting some of you in person. For me now this is just another recipe site like to many on the net, it has lost its specialness, such a pity especially when Scripps changed the name from Recipezaar to Food.com and made this statement sorry cannot replicate here as considered invalid but they basically said yes the community was valuable hence .com was short for community but it was a pack of lies as they were not willing to put the money into that community and got rid of the forums which was the community so for .com has become .crap.
