Cheesy Tater Tot Breakfast Bake

"My family loves this recipe. I got this off the internet some time ago, and have been experimenting with it ever sense. The possibilities are only limited by your imagination--change up the bacon flavor, the type of sausage (chorizos), type of cheese (Pepper Jack), add different peppers (jalapenos), garlic, onions, etc. This is a great recipe when you have house guests--it can be made the night before and baked up hot and hearty the next morning."

  • Brown sausage, drain and layer onto the bottom of a 9 x 13 inch baking pan/dish. Evenly sprinkle 2 cups of the cheese over the cooked sausage.
  • In a large bowl, whisk together the milk, eggs, pepper, onion and garlic powder, and salt. Pour evenly over the sausage/cheese. Layer on frozen tater tots. If not baking right away, cover tightly with foil and chill until ready to bake.
  • Pre heat oven to 350°F Place casserole in oven (middle rack) and bake for 35 minutes. Top with remaining cheese and crumbled bacon and bake for another 5-10 minutes or until sides are bubbling and top is golden brown.
  • Garnish with chopped parsley, and let rest at room temperature for 10 minutes before serving.
