Cheesy Tater Tot Breakfast Bake

- 6 slices bacon (cooked and crumbled)
- 1 lb breakfast sausage (No casings. We like Hot Jimmy Dean)
- 2 cups whole milk
- 3 eggs (extra large)
- 2 1⁄2 cups sharp cheddar cheese (shredded)
- 1⁄2 teaspoon ground black pepper
- 1⁄2 teaspoon onion powder (if not adding onions)
- 1⁄2 teaspoon garlic powder (if not adding garlic)
- 2 lbs frozen tater tots
- 1⁄4 teaspoon salt (salt to taste)
- 2 tablespoons fresh parsley (chopped)
directions
- Brown sausage, drain and layer onto the bottom of a 9 x 13 inch baking pan/dish. Evenly sprinkle 2 cups of the cheese over the cooked sausage.
- In a large bowl, whisk together the milk, eggs, pepper, onion and garlic powder, and salt. Pour evenly over the sausage/cheese. Layer on frozen tater tots. If not baking right away, cover tightly with foil and chill until ready to bake.
- Pre heat oven to 350°F Place casserole in oven (middle rack) and bake for 35 minutes. Top with remaining cheese and crumbled bacon and bake for another 5-10 minutes or until sides are bubbling and top is golden brown.
- Garnish with chopped parsley, and let rest at room temperature for 10 minutes before serving.
