Brothy Chicken & Sweet Corn Soup

- 3 cups reduced-sodium chicken broth
- 1 cup water
- 2 tablespoons Chinese wine or 2 tablespoons sherry wine
- 3 cm piece fresh ginger, grated
- 1 garlic clove, sliced thinly
- 2 teaspoons salt reduced soy sauce
- 2 skinless chicken breast fillets (400grms)
- 1 egg
- 420 g creamed corn
- 310 g corn kernels (drained & rinsed)
- 3 spring onions (sliced thinly)
directions
- Bring stock, water, wine, ginger, garlic, spring onion, soy sauce, and chicken to the boil in a large saucepan over a medium heat.
- Reduce heat and simmer for about 7 minutes or until the chicken is just cooked through.
- Remove chicken from stock and when cool enough to handle, shred coarsely.
- Return stock to boil.
- Break egg into small bowl and whisk lightly.
- Slowly pour egg into stock, whisking constantly so it forms small threads.
- Add creamed corn, kernels and chicken to stock and return to the boil.
- Serve!

Lovely! My husband asked me yesterday for a nice corn soup for tonight's dinner. I'd had my eye on this one for awhile, and I'm glad I tried it! Very easy to make, and absolutely delicious. I made it pretty much as directed, except for substituting scallions for spring onions. I'll definitely make it again!

I live in Perth, Western Australia. I am an Office Manager in a Mining Exploration Company. I love summer and going to the beach. I also like rugging up in warm clothing during winter. I love watching cable tv with my hubby on quiet nights at home. I love cooking with a glass of red wine but equally I like a beer or two! I have two cats who I adore but who live with my parents as our place is on a main road and I want them to have a long life. We have recently acquired 2 Jack Russell puppies who are so adorable. They are now part of our little family. DH and I like to get away down south of Western Australia at least 4 times a year. We are happy to stay in 5 star hotels or camp! Depends on the mood! We have recently purchased a block way down south of Western Australia in a little coastal town called Hopetoun. We are looking forward to building a house and spending a lot more time down there, with the view that we will retire down there and enjoy our fishing life. I am happy with my life and look forward to having children with my lovely husband. I don't have many dislikes but I do dislike bitchiness and arrogance.
