Chicken With Sun-Dried Tomato Pesto Packets

- 4 boneless skinless chicken breast halves (4 to 6 oz. each)
- 2 (14 1/2 ounce) cans diced tomatoes, drained
- 1 cup sun-dried tomato pesto
- 2 cups frozen green beans or 2 cups frozen cut green beans
- 8 ounces hot cooked angel hair pasta or 8 ounces capellini
directions
- Preheat oven to 450°F or grill to medium–high.
- Lay out 4 sheets of aluminum foil, each one measuring 12x18 inches.
- Center one chicken breast half one each sheet foil with non-stick (dull) side toward food.
- Combine tomatoes and pesto; spoon mixture over chicken.
- Arrange green beans on top of tomato mixture and chicken.
- Bring up foil sides. Double fold top and ends to seal packet, leaving room for heat circulation inside. Repeat to make four packets.
- Bake 20 to 22 minutes on a cookie sheet in oven OR GRILL 12 to 14 minutes in covered grill.
- Arrange chicken and sauce over cooked pasta.
- SERVING SUGGESTION: Sprinkle with grated Parmesan cheese, if desired.
