  • Preheat oven to 400 degrees.
  • Saute onion and green pepper in butter.
  • Add eggs, creamed corn can, corn and liquid, Jiffy mix, salt, sour cream and cheddar cheese.
  • Pour into a 9x13 inch baking pan and bake for 45 minutes or until top is golden brown.

  1. Made this for Thanksgiving. Everyone loved it. I doubled the recipe with no problems using 9X13X2. I followed recipe exactly except I had some extra red pepper that I threw in too. Thanks for posting this.
     
  2. 11/06: We forgot all about it in the oven, didn't put it in the right size pan, the top was burnt and it was still delicious. --Update 12/09 Still making this one for holiday get togethers. I'm always asked to bring that "Corn Casserole". Yummy!
     
  3. This recipe is wonderful! I modified the original a bit. I used red pepper in lieu of green, omitted the onion and I used another vegetarian-friendly brand of cornbread mix (Jiffy has lard in it). Also, I subbed low-fat sour cream and cheese. Simply outstanding dish! Thank you!

  5. I loved this recipe, but everyone at the table said it would be a little better if pepper jack cheese were used next time.Not a criticism, but an enhancement since we were having mexican food.

I work as a professional stagehand for my local union (IATSE Local 26, West Michigan Stagehands), which takes me all over the state and lets me meet all sorts of interesting people. In November of 2008, I was elected to my third three-year term as Recording Secretary of my union local. Currently, I am the news poster for www.megatechnews, a computer tech site affiliated with several other tech sites. My biggest passion is union activism. The more I get involved, the more I want to be involved. I also read like a fiend and enjoy "discovering" local or regional bands at local clubs. Recently, I started making jewelry again after a more than ten-year hiatus. It started as a project for Christmas presents, but doing it reminded me how much I enjoy it, so I may be resurrecting my business soon. I never duplicate a piece, because the entire point is that I do custom work, and will take orders to suit.
