Creamy Dijon Cheesy Cauliflower

  • Grease a shallow baking dish.
  • Cook the cauliflower in a saucepan of lightly salted water just until tender.
  • Drain, then place in the greased dish, keep warm.
  • Melt the butter in a saucepan, add flour and cook for 1 minute stirring constantly.
  • Remove from heat, then whisk in milk, and mustard.
  • Return to heat and bring to a boil, stirring constantly.
  • Cook, stirring, over low heat for 2 minutes.
  • Remove from heat.
  • Add parmesan and 1/2 cup of the cheddar cheese and stir until melted.
  • Season to taste with salt and pepper.
  • Pour cheese sauce over the cauliflower.
  • Combine the bread crumbs and remaining cheddar and sprinkle over the cauliflower.
  • Cook under a broiler until the top is browned and bubbling.

  2. This receipe is certainly a keeper. My husband and I enjoyed it very much. I'm not much on Cauliflower but this I could handle. I wouldn't change anything about it. You can be sure this will be on a future Buffet Table.
     
  3. I love cauliflower and I loved this! The dijon and cheese sauce was perfect. I used panko crumbs for the breadcrumbs. I also added just a little salt and pepper. Thanx for posting!
     
  4. I am often intimidated by cheese sauces, but this was foolproof. I used Cabot reduced-fat cheddar, and served it over brown rice. It's a great, indulgent vegetarian entree.
     
  5. Quick, easy, made it the day before and it was just great. Couldn't complain if I wanted to.
