  • Cook potatoes in a covered saucepan in boiling water for 15-20 minutes, or until just tender; drain well.
  • Peel and cube potatoes.
  • In a very large bowl combine celery, onion, mayonnaise, vinegar, mustard, salt and pepper.
  • Add potatoes and eggs.
  • Toss lightly to mix.
  • Cover and chill for 6 to 24 hours.

  1. I have made my potato salad like this for years. It is very flavorable. To help cut down on the calories, use fat-free mayonnaise and sour cream. You won't taste the difference with the vegetables and spices added.
     
  2. A classic! Creamy and delicious indeed. The sour cream helps lessen the heaviness of the mayonnaise while keeping the salad moist. I used light sour cream. A crowd-pleaser for sure. Thanx!

Tweaks

  1. This is super easy and smells scrumptious: I really like the onion and celery additions. As I omitted the hardboiled eggs (we were having deviled eggs too, and it seemed like overkill to put them in the salad), I also reduced the mayo to half a cup. I used garlic salt for the seasoning salt, and apple cider vinegar instead of white vinegar. I only boiled the potatoes ten minutes...oops! So they were a little too hard for my liking, but the salad still tasted great. I will cook them longer next time :-) Thanks for a nice basic recipe, just what I was looking for! This could easily be jazzed up with grated carrot, dill, whatever, but it's very good as written.

I live on the beautiful Central Coast of California. I am a 46 year old single mom and student (I got my AA degree in business management May 05). (*cringes* and thinks of the drawers full little pieces of paper with recipes on them) My favorite cookbook is my mom's old (1930's) Better Homes and Gardens Cookbook. Followed closely by the "______ the Beautiful" series, of which California the Beautiful (of course) is tops on that list.
