- 1 1⁄2 cups cornmeal
- 1⁄2 cup rice flour (I use Authentic Foods Brand)
- 1⁄2 teaspoon baking soda
- 1⁄2 teaspoon salt
- 1 cup milk
- 2 eggs, beaten
- 2 tablespoons vegetable oil
- 2 cups sharp cheddar cheese, shredded
- 1 cup frozen corn, thawed
- 1 small onion, chopped small
directions
- Combine first 4 ingredients, mix well. Add milk, eggs, oil, stirring well. Stir in remaining ingredients. Pour into greased 9 inch square baking pan. Bake at 350 degrees for 40 to 45 minutes until lightly brown. Yield 9 servings.
