- 1 lb fresh green beans
- 2 tablespoons grapeseed oil or 2 tablespoons peanut oil
- 1 garlic clove, finely minced
- 1⁄2 teaspoon ground cumin
- 1⁄4 teaspoon paprika
- 1⁄4 teaspoon ground cloves
- 1 tablespoon slivered almonds
directions
- Clean and trim green beans. Blanch the green beans in a large pot of boiling salted water for about 1 minute or until bright green.
- Drain the green beans, rinse to stop the cooking process and set aside.
- Heat up the oil in a sautè pan. Place remaining ingredients in the saucepan over medium heat and cook for two minutes; stirring constantly.
- Pour the spice mixture over the green beans and toss gently until beans are thoroughly coated.
- Serve warm.

The sauce in this recipe is absolutely delish. The beans however, were cold once in the bowl of ice water, so I couldn’t keep them warm as the recipe says. Next time instead of pouring the sauce over the beans I will put them in the pan with the sauce and toss till covered and warm, and then serve. The kids generally don’t like beans but they loved the sauce so they ate the beans! Thanks

This is an unusual way of dressing green beans, which I think would go beautifully as an accompaniment to plain-ish dishes such as grilled chicken. I had to use olive oil, since I forgot to buy any peanut oil, but otherwise followed the recipe exactly. The almonds added a nice textural variation, and the cloves really made it stand out from the crowd. Very good!
