Ham and Black Bean Toss With Cilantro

"My sister, Donna, came up with this recipe after looking over all our left-overs. It was an instant hit with our family. It was so good and easy, I thought I would share it here. It was served with another of her recipes, Savory Jalapeno French Toast, and corn-on-the cob. I hope y'all enjoy it!"

  • Sautee onion in olive oil in skillet or sauce pan under medium heat.
  • Add garlic. Cook until onions are translucent.
  • Add ham chunks.
  • Drain black beans and rinse thoroughly. Add to pan.
  • Stir frequently until well mixed and heated throughout.
  • Garnish with cilantro and sour cream.

  1. This is an awesome dish for leftover ham. I added rotel tomatoes and cumin at the beginning and served it over rice! Yum!
     
  2. This was a great way to use leftover roasted ham. I added 1 can of chili style diced tomatoes and a little cumin for a mexican flavor and moisture. Served over rice for a quick meal.

I am a 61 year old woman, retired. my older sister lives with me and we take turns cooking. we are known in the neighborhood as THE SISTERS. Never thought I would reach the whimsical age, but I guess I have.
