- 1 cup ham, cut into 1-inch to 2-inch chunks
- 1 (15 ounce) can black beans
- 1 medium onion, sliced thinly
- 1⁄4 cup cilantro
- 1 teaspoon garlic, minced
- 2 tablespoons extra virgin olive oil
- 3 tablespoons light sour cream
directions
- Sautee onion in olive oil in skillet or sauce pan under medium heat.
- Add garlic. Cook until onions are translucent.
- Add ham chunks.
- Drain black beans and rinse thoroughly. Add to pan.
- Stir frequently until well mixed and heated throughout.
- Garnish with cilantro and sour cream.

I am a 61 year old woman, retired. my older sister lives with me and we take turns cooking. we are known in the neighborhood as THE SISTERS. Never thought I would reach the whimsical age, but I guess I have. We try to go to Curves to workout 2-3 a week, cook, watch tv (I tend to argue with CNN reporters on politics), play games on the computer, read and attempt to ride herd on our menagerie (5 cats and 2 dogs).
