Southern Ham & Rice Casserole

"One of my oldest recipes! I can't count the times I've made this. Now my daughter makes it regularly for her family. For some reason, this really appeals to kids who stick up their noses at one dish meals. It's quick, easy and delicious."

ingredients

  • 177.44 ml long grain rice
  • 118.29 ml chopped onion
  • 29.58 ml cooking oil
  • 473.18 ml ham, cooked and cubed
  • 255.14 g package frozen cut green beans
  • 297.66 g can beef broth

directions

  • Cook rice and onion in oil until rice is lightly browned, stirring frequently.
  • Add ham, beans, broth and ½ cup water. Heat to boiling.
  • Turn into a 2 quart casserole. Cover and bake at 350 for 45 minutes or until rice is tender.
  • Stir just before serving.

  1. This might be a VERY stupid question, but do you use cooked 3/4 cup rice or uncooked for the first step? I am a new wife, so I am trying out a lot of recipes with rice for the first time. Thank you so much!

  1. This was a hit with the whole family! I added the ham to the rice to brown it a bit...then I added the broth and water. I also didn't bother putting it in the oven...I just finished it on the stove and added steamed broccoli cuts to it after it was cooked. (I kept all the same measurements).
     
  2. Easy and great recipe for leftover ham. I swapped peas for the beans and used red onion which was delicious. I will add more rice next time. I added 1 tsp garlic powder and also missed step 2 and had to cook at 400 for an additional 15min to cook the rice. Will definitely make again, thanks!
     
  3. Yum, Yum, Yum. It doesn't get any better than this - Easy, Inexpensive, Nutritious & Totally Delicious. I didn't change a thing. (I almost wanted to add some rice before I put it in the oven as I didn't think it called for enough, but I am glad I didn't - It came out perfect!) I My whole family loved it.
     
  4. Hi Bobbie...no I'm not stalking your recipes (since this is my third review for you). I just happened to have this in my cookbook to try. I was at work and I left the recipe for my hubby to make. He found it very easy to make. He thought it might be a little bit bland, based on the ingredients, but he was blown away at how good it was. He loved it and I did too. Such a simple recipe with simple ingredients, but, oh, so good. Zaar people, you have to try this one! I'm having leftovers for lunch tomorrow. Thanks again, Bobbie!

This is a picture of me with my oldest grandson, DJ and was taken this past summer when we went on a cruise and land tour of Alaska. I am retired after working for the same company for 25 years. My husband is a retired military officer. After the military he started working for Lockheed and is now retired from there as well. We live in San Jose, CA and have lived in the same house for over 33 years. We have two grown children and 6 beautiful grandchildren. I love to try new recipes and jazz up old ones. Taste of Home and Southern Living are my favorite recipe magazines(I enjoy reading a little bit about the people who submit the recipes). Recipe Zaar is just an incredible site. I've made many new friends since joining.
