  1. I am editing my review of this recipe. When making this tea, I use 8 cups of diced rhubarb, rather than the 8 stalks, plus I used 1-1/2 cups of sugar. That seem to be the perfect amount of sugar for this recipe. Also, this tea can be made using 8 cups of frozen rhubarb, and I simmered the frozen rhubarb (covered) for 2 hours. Now I can enjoy this iced tea all year round. One other thing I forgot to mention while posting my review... I found this recipe made more than 8 cups. It made (about 88 ounces) 2-quarts and 24 oz. Sugarpea, 2 other reviewers described this iced tea perfectly... refreshing, exquisted, and fantastic! Thank you sugarpea for posting this recipe. It's definitely a keeper!!

  2. This was so delicious! I used frozen rhubarb because fresh rhubarb isn't available this time of year, but I don't think that matters! I also think the sugar amount is just right, as I find (in previous recipes) rhubarb to be tart at times.

  3. I'm not going to star this recipe because I didn't have fresh mint, or any at all for that matter, and I think it would make a big difference in the taste. I did make this from very green rhubarb I got from a friend and it turned out nice. I think I will use it to make a variety of drinks. I have some fresh raspberry drippings I might use, and also some raspberry Chambord that needs to get used. Oh the drinks I can drink with this!

  4. I enjoyed this tart and tangy treat very much. I did cut it back for two people and used less sugar. It was quick and easy to make, with great results. This refreshing iced tea was flavorful and very pretty. I left my mint garnish in the tea and really enjoyed the mint flavor with the rhubarb. I will be making this again often. Thank you so much for sharing a new summer favorite.

  5. Absolutely FANTASTIC, Very refreshing, and so inexpensive. I used artificial sweetener in place of the sugar. I'll be having this in my fridge every Spring. I'll have to try it with frozen rhubarb too. That way I can enjoy it all summer long. Thanks for sharing such a wonderful recipe.

I’m a former interior designer and landscape designer. At the moment I get to enjoy being at home and working only when I want to. I like rollerblading, hiking, backpacking and trips to the ocean. I grew up on a farm in the Midwest and moved to the Northwest when I was thirty, over twenty years ago. I’m afraid they’ll have to bury me here in WA. This is God’s country and I’m never leaving. I have a smallish collection of cookbooks, preferring to use the library and a copy machine. Among my favorites though, are: Recipes 1-2-3, by Rozanne Gold, a collection of recipes containing no more than 3 ingredients (excepting water, salt and pepper); A Treasury of Great Recipes, by Mary and Vincent Price, recipes collected from friends and chefs of great restaurants around the world; The Mediterranean Diet Cookbook, by Nancy Harmon Jenkins, about a collection of cuisines I’m convinced are the healthiest in the world and The Low-Calorie Gourmet, by Pierre Franey. Currently my passions are our dogs, the garden, cooking, the natural world and of course, Dh. I can now add Zaar to that list of passions (translate: addiction). We have three dogs, two rescued and one adopted. They are Sugarpea, a Golden Retriever, Chickpea, a Llasa Apso and Sweetpea, a Shih Tzu; small, medium and large. We’re quite a sight out on the trail. One of the things I am most fond of about living here is the ability to vegetable garden year ‘round.
