Italian Sausage Soup

  • In Dutch Oven, brown sausage with garlic.
  • Stir in broth, tomatoes and carrots, season with salt and pepper.
  • Bring to boil, reduce heat, cover and allow to simmer 15 minutes.
  • Stir in beans with their liquid and zucchini.
  • Cover and simmer another 15 minutes, or until zucchini is tender.
  • Remove from heat, stir in spinach.
  • Cover and allow spinach to cook in the steam from the soup for another 5 minutes or until tender.
  • Serves 6.

Tweaks

  1. - 50/50 mix of spicy and sweet sausage adds just the right amount of kick... even if you have someone with a "delicate mechanism" at home. - Add one medium onion and double garlic and carrot portions. - Have additional spinach for left-overs - Using a carton of beef broth provides some much needed extra liquid when you're heavy on veggies.
     
  2. Nice recipe. Great way to "sneak in" some vegetables to kids. I used a large (28oz) can of tomatoes and canellini beans instead of the great northern beans. Good cool weather dinner. I will be making this again. Thanks Bev!
