directions

  • Combine tomato and, if desired, onion in a large bowl.
  • Combine basil and next 6 ingredients; add to tomato mixture, tossing to coat. Sprinkle with cheese. Chill.
  • Garnish, if desired.
  • Note: 6 plum tomatoes may be substituted for 3 large tomatoes.

  1. A quick and easy salad that has a beautiful presentation. Hubby absolutely loved it. I seeded the tomatoes, didn't add the onion and added a little less vinegar. Next time I will serve it right away as it lost its lovely color after being chilled. Thanks for a keeper Al!
     
  2. Tried this recipe twice because I thought I did something wrong the first time. Second time it still didn't taste very good. Too bad. It seemed nice.
     
  3. Pretty good but kind of slimy for my guests.

<p>I recently celebrated my 19th anniversary living in SW Florida. I moved here from Massachusetts, just north of Boston. As much as I miss family back home, I truly love living here - the beaches, the tropical beauty, the people, and the weather (except the hurricanes!). Everyday is just another day in Paradise. I've had an interest in cooking since I was a little boy, following my grandmother around the kitchen. Since I wasn't blessed with any artistic or musical talent, I think cooking was my way of being creative. My passion is my family and friends. My second passion is cooking for them. My favorite way to entertain is informally...brunches, cookouts, and small dinner parties. Just relaxing, enjoying each other's company, some good food and drink, and a little fun are the only rules of the house.</p>
