Jicama Orange Salad

ingredients
- 2 cups jicama (cubed and peeled)
- 2 blood oranges (peeled, sliced, and cut in half) or 2 navel oranges (peeled, sliced, and cut in half)
- 1⁄2 cup orange juice
- 2 tablespoons cilantro, chopped
- 1⁄2 teaspoon salt
- 1 avocado (peeled and cubed)
directions
- In a medium non-metal bowl, combine all ingredients except avocado and mix well.
- Cover and refrigerate 2 to 3 hours, stirring occasionally.
- Add avocado and toss gently.
- Drain salad, reserving orange juice dressing.
- If desired, serve on lettuce-lined plates with reserved dressing.
