- 2 tablespoons oil
- 2 onions, minced
- 1 lb ground beef, extra lean
- 1 garlic clove, crushed
- 1 1⁄2 teaspoons salt
- 1⁄4 teaspoon black pepper
- 1⁄2 teaspoon oregano
- 3 tablespoons parsley, chopped
- 3 cups tomatoes, if using canned tomatoes drain them
- 1⁄2 cup tomato puree
- 1⁄2 cup tomato paste
- 1⁄2 cup parmesan cheese, grated
- 1⁄2 lb lasagna noodle (8 noodles)
- 1 lb mozzarella cheese
- 1 lb ricotta cheese
directions
- Heat oil in a 10 - 12 quart pot and sauté onions until golden brown.
- Add ground beef, stir to break up and cook for 10 - 15 minutes. Add garlic, salt, pepper, oregano, parsley, tomatoes, tomato puree, tomato paste and 2 Tbs Parmesan cheese. Stir well, cover and simmer for 45 minutes.
- Cook lasagna noodles in boiling salted water, drain and cover with cold water. Set aside till ready to use. You may wish to cook the noodles for the minimum time listed on the package so they are not to soft, Al détente.
- Arrange in a 9 x 13 baking dish. 1/3 of the meat sauce, cover with 1/2 the lasagna noodles, 1/2 of the mozzarella, then 1/2 of the ricotta cheese. Sprinkle with 2 Tbs Parmesan cheese. Repeat, ending with a layer of meat sauce and the remaining Parmesan cheese. Bake in a 350F oven for 30 minutes.
- Leave it rest for 15 minutes after taking it from the oven.
