Lentils With Chorizo & Red Wine

ingredients
- 5 ounces green lentils or 5 ounces brown lentils
- 3 onions, sliced
- 1 garlic clove, crushed
- 2 cups chicken stock
- 2 teaspoons red wine vinegar
- 3⁄4 cup red wine
- 3 ounces chorizo sausage, roughly sliced
- 1 tablespoon parsley, chopped
- 2 sprigs thyme
- salt and pepper
directions
- Fry the onion and garlic in a little oil then add the lentils, red wine, stock, vinegar and thyme.
- Simmer gently for 30 minutes until tender, add the chorizo for the last 5 minutes of cooking time. Season with salt and pepper.
- Stir through the parsley.
- Serve with lots of crusty bread.

I made this a couple weeks ago and forgot to review. I used vegetable stock and soy chorizo, and I only used one onion because it was pretty big. Other than that, I made it exactly as directed. It turned out great and the leftovers heated up very nicely. I had it with French bread -- and the leftover wine, of course! Excellent recipe that I will definitely be making again.
