- 175 g mushrooms
- 1 garlic clove
- 1 teaspoon olive oil
- 1⁄2 onion, finely chopped
- 1⁄2 cup arborio rice
- 1 1⁄2 cups chicken stock
- 1⁄2 cup fresh spinach leaves
- 1 1⁄2 tablespoons parmesan cheese, grated

- 1⁄2 lettuce leaf
- 1⁄3 tomatoes
- 1⁄2 cucumber
- 1⁄2 carrot
directions
- Prepare salad.
- Pan cook mushrooms & garlic until tender, use a little water to stop them sticking.
- Fry onion in oil until cooked, add rice and 1/2 cup stock until absorbed. Keep adding stock 1/2 cup at a time stirring constantly until rice is soft.
- Stir through mushroom and spinach until warmed through.
- Serve with side salad.
