Low Carb Skillet "Pizza"

"Ahhhhhh the taste of pizza, but still low carb! This is SB Diet friendly for Phase 1. I searched several low carb websites looking for snack ideas and found a recipe for "pizza" that used melted cheese as its' base. While it tasted good, I thought it was a bit of a pain to melt the cheese to the right consistency. I got to thinking what else I could use instead and came up with this. Yummy, fast and simple! You can use any of your favourite pizza toppings."

 1. Pizza is always such a great way to eat your veggies! And I can have this for breakfast.
We had this For lunch today, Yes I did made a few alterations, I can't leave anything alone! I have to play with my food. I did adjusted to my personal taste. I think I would like to add some herbs to the mix and 1/2 cup shredded mozzarella cheese for my tastes and would definately like to make again. I did use thin pita bread, To me this is a recipe in which the ingredients could be added or taken from to satisfy indiviudal taste. Next time I may use Applewood-smoked bacon, cremini mushrooms, asparagus, and Asiago cheese all come together on a thin, crunchy flatbread to create a hearty and delicious main. Preparation may take some time, but the finished product is well worth every second. Serve alongside a fresh green salad for nice balance. Thanks for sharing...... Thank you!!! Happy Cooking to y'all ! Grpa

I have two teenage children and am very happily married. We live in Southern, Ontario.

I live to cook and just love to putter around the kitchen. I enjoy reading all kinds of cookbooks which I borrow from the library or buy second hand. I really like Taste of Home magazine, because the recipes are from ordinary people and aren't too complicated. I also like to read community or church cookbooks because you know that the recipe must be special for someone to share it.

I discovered RecipeZaar because it was mentioned by someone in a cooking magazine...now I am hooked. I think it is so helpful to read the reviews and suggestions from others who have tried recipes before me.

I always thought of myself as a pretty good cook, but I am learning so much since I have joined RecipeZaar. I really appreciate the ideas and feed back that everyone provides.
114172283"
