- 1⁄4 cup margarine
- 1⁄2 cup sugar
- 1 cup sifted all-purpose flour
- 1⁄4 teaspoon salt
- 2 teaspoons baking powder
- 1⁄2 cup skim milk
- 1 mango, cut into 1/2-inch cubes
- 3⁄4 cup raspberries
- 1⁄4 cup sugar
- 1 cup skim milk
directions
- Preheat oven to 375°F Spray 10 x 5 x 3 or 2 quart casserole dish with cooking spray.
- Cream together butter and 1/2 cup sugar until light and fluffy. Sift together flour, salt and baking powder.
- Add flour mixture to creamed butter and sugar mixture alternately with 1/2 cup milk. Beat until smooth. Pour into prepared pan.
- Spoon berries over batter. Sprinkle 1/2 cup sugar over berries. Pour 1 cup milk over top.
- Bake 45 to 50 minutes. Batter will rise to top and create a custard within.

Very nice. I used frozen raspberries and mangos (thawed) and I used quite a bit more fruit than called for in the recipe. I did use almost the full 1/2 cup of sugar. We don't like things too sweet, but I thought it was just about right because raspberries are so tart. I was apprehensive about how many this would serve, but there was a little left over from 8 people. (Served with ice cream to a group who are not big dessert eaters, mind you. If you have real dessert fans, I would say this would serve 6 generous potions.) This was very easy and I will make it again! Thank you heidih88 for posting!

My husband doesn't like sweet foods, so he never, ever has dessert - or rather, he didn't until I made this recipe. He devoured this cobbler and went back for 2nds and 3rds, and then asked me if I could make some more! I have made this 3 times so far, and it has come out great every time. It's moist, delicious and easy to make. The first time I made it using mangoes and bananas (my raspberries had gone bad, and 2 bananas were the only other fruits I had on hand). The second and third times I used peaches and raspberries. Note that in step 4 it says to sprinkle 1/2 cup of sugar over the fruit, although it says 1/4 cup in the ingredient list. I suppose it depends on one's personal tastes, but I found that 1/4 cup was just the right amount. 1/2 cup would have been too much for our liking. Thanks a million for sharing this recipe. Now that I've found a dessert my husband will actually eat, I'll be making this again and again!
