- 2 egg yolks
- 1 tablespoon white vinegar
- seasoning
- 1 pinch dry mustard
- 1 1⁄4 cups olive oil
directions
- Beat egg yolks, together with the vinegar, seasoning and mustard for about 30-40 seconds. While beating add the olive oil in a constant stream until all ingredients are combined.
- Serve chilled.

I am not giving a star rating. I used an extra virgin olive oil and only 3/4 cup. I stopped at this amount when I did a taste test. It was wonderfully thick and creamy but I found the olive oil to strong . Maybe it was my oil . It was a fresh bottle. Made for the Aus/ NZ recipe swap #28 for the Gingerbread Team
