Directions

  1. Heat olive oil in large skillet over medium heat.
  2. Add bell pepper, onion and garlic, and saute for 2-3 minutes, or until vegetables are tender.
  3. Add chicken broth, tomatoes, oregano, basil and black pepper; bring to a boil and cook for 2 minutes.
  4. Reduce heat to medium-low.
  5. Place catfish fillets in the sauce, cover, and simmer for 7-9 minutes, or until the fish flakes easily with a fork.
  6. Individual fillets with sauce may be served over a bed of cooked rice.
