Mirin Marinade

ingredients
- 6 tablespoons sweet cooking mirin
- 3 tablespoons shoyu
- 2 teaspoons brown sugar
- 2 teaspoons trappy's cayenne pepper sauce (or any like kind)
directions
- Mix all ingredients together; stir well and marinate ahi or scallops for 30 minutes. No longer or the acids will start to cook the fish.
- Reserve 1oz to use for basting while grilling.
- Sear ahi about 2-3 minutes each side over a medium high heat for a medium to medium rare cook.

I'm lucky in that my husband will eat just about anything I put in front of him, even those labeled as "fails". Even then, he will choke it down without to much grumbling.
