- 2 tablespoons mustard
- 2 tablespoons balsamic vinegar
- 3 tablespoons lemon juice
- 2 cloves garlic, minced
- 1 teaspoon paprika
directions
- Combine all ingredients together.
- Let chicken marinate for at least 30 minutes.
- Grill.

How can you go wrong with these ingredients!! I did up the garlic to 3. Placed all the ingredients in a zip lock bag with chicken thighs, layed it flat on a cookie sheet and froze. For a quick thaw, place the bag in a sink of tempid water for approximately 30 minutes, more if your chicken thighs are large, turning the bag occasionally. I got this tip from our good friend who is a butcher. Now, I always have chicken thighs in my freezer for a quick, easy supper. Next tine, I might experiment with the mustards for a different taste. Great contribution!

Fantastic. I am a bodybuilder often looking for chicken recipes that do not include bread crumbs or high sodium ingredients. It makes it hard to not get a bland flavor. I used this recipe with English mustard and a good quality balsamic vinegar on diced chicken breast. 6 hours in a ziplock bag in the fridge and then skillet fried with spray oil. Using English mustard gives this marinade a nice punch, I used a higher ratio than given in the recipe. Only problem is nobody wants "diet" food, so you end up cooking your portion, and suddenly everyone wants some. I recommend you double your portion when cooking this.

I always tweak so much it barely resembles the original, but since my tweak was tasty I figured I'd post! I used this to marinate whole chicken legs, doubled(ish) existing proportions, halved amount of balsamic and added: tahini (about half the amount of mustard), splash of olive oil, honey (approx. 1/4 of amount of mustard), a few shakes of ginger, heaping tsp of chili flakes, and a few dashes of Tabasco. YUM!
