Mustard Breaded Chicken

"This recipe is from Taste of Home Best Ever Chicken Cookbook 2009. I do like using bread crumbs made at home from either a winter wheat bread of a dense whole wheat bread!"

  • Flatten chicken to 1/4-inch thickness.
  • In a shallow bowl, combine bread crumbs & 1 teaspoon of the mustard.
  • In another shallow bowl, combine honey & remaining mustard.
  • Dip flattened chicken breasts in honey/mustard mixture & then coat each with crumbs.
  • In a nonstick skillet, melt butter & cook chicken over medium heat 4-6 minutes on each side or until chicken juices run clear.
  • Enjoy!

  1. I LOVED this recipe!! It's quick, easy and delivers on flavor. I loved the honey/mustard combination. The chicken is nice and moist on the inside while being crispy on the outside. Yum!
     
  2. What an enjoyable dish. I was thinking about using some "honey mustard sauce" for dipping but none was needed. This is full of honey mustard taste. I did replace the chicken with pheasant and it worked great. Thanks for posting, :)

  4. This had a good flavor with the honey and the mustard and was not overloaded. I had a problem with the breading coming off when I was pan-frying them. Next time I will bake it; DH could live off of baked-breaded chicken. Made for Please Review My Recipe Tag February 2010.
     
  5. I cooked mine slightly differently using the broiler without any flattening. Rather simple that way and it turned out wonderfly. Thank you for a very delicous and easy supper!
