My Pear Crisp

"I had some pears that were really wanting to go bad :). I made this up. You could substitute any fruit and berries. This is a diabetic recipe, but your can substitute real sugar."

  • Preaheat oven or toaster oven to 375*F.
  • Mix cornstarch, sugar, cinnamon, and water in a small bowl. Stir to combine.
  • Chop pears, remove the insides, combine with apricots.
  • Spray a pan with cooking spray and add pear mixture. Stir in cornstarch mixture.
  • Cook a few minutes, stirring constantly until the the whole thing gets thick and the fruit is tender.
  • Spray a pie dish with cooking spray, add the fruit from the pan and set aside.
  • Melt butter in the microwave. Stir in sugar and cinnamon.
  • Combine oats and cereal and stir in butter mixture. Stir to combine.
  • Spread mixture on top of the fruit in pie dish and put into oven.
  • Bake until topping begins to brown/get crispy.
  • Serve warm or cold. Top with vanilla ice cream or whipped cream if you desire and sprinkle with the extra cinnamon.

I am originally from Moscow, Russia but I currently live in Clemson, SC and attend Clemson University. If I was not majoring in microbiology i'd be cooking all the time. I LOVE cooking but I don't think I'd ever want to go to culinary school because I treat recipes as "guidelines" versus actual instructions.
