  • 4 egg yolks
  • 4 egg whites, beaten
  • 1 teaspoon salt
  • 1 cup sugar (more or less, depending on what you like)
  • 4 14 cups milk
  • 2 cups flour
  • 0.5 (21 ounce) can cherry pie filling (optional)
  • 2 apples, sliced (optional)

  • Beat egg whites.
  • Slowly add sugar, milk, flour and egg yolks, stirring constantly.
  • Add either pie filling or sliced apples, if desired.
  • Heat pan over stove.
  • Add oil or cooking spray (better results with oil).
  • Drop about one teaspoon of batter into hot pan. You can fit as many pancakes into the pan as the pan is big.
  • Pancakes should be thick and not very large.
  • About 2 - 3 inches in diameter.
  • Serve hot.

  1. I'm really sorry to say, that halving this recipe, without using the optional ingredients, makes for a very watery batter, than cannot be used. I realized this in time, and quickly fixed it by adding a tremendous amount more in flour, as well as the very necessary baking powder, which is always in oladiki. I have been making my version of oladiki for years, and will continue to use my own recipe; which has a fraction of the milk, less eggs, and has baking powder - as true oladiki should be puffy and light, not flat.
