- 3⁄4 cup sugar
- 1⁄2 cup butter, softened
- 1 egg
- 3 tablespoons orange juice
- 2 teaspoons freshly grated orange peel
- 1 teaspoon vanilla
- 2 cups all-purpose flour
- 1⁄4 teaspoon salt
- 1 cup powdered sugar
- 1 tablespoon butter, softened
- 3 -4 teaspoons orange juice
directions
- Combine sugar and butter in large bowl. Beat at medium speed, scraping bowl often, until creamy.
- Add egg, 3 tablespoons orange juice, orange peel and vanilla; continue beating until well mixed.
- Reduce speed to low; add flour and salt. Beat until just combined.
- Divide dough in half. Wrap each half in plastic food wrap; flatten slightly. Refrigerate until firm (2 hours).
- Heat oven to 375°F Roll out dough on lightly floured surface, one-half at a time (keeping remaining dough refrigerated), to 1/8-inch thickness. Cut with 2 1/2-inch flower-shaped cookie cutter. Place 1 inch apart onto ungreased cookie sheets. Bake for 6 to 10 minutes or until edges are golden brown. Cool completely.
- Meanwhile, combine powdered sugar and butter in small bowl. Beat at medium speed, scraping bowl often and gradually adding enough orange juice for desired spreading consistency (2 to 3 minutes). Frost cooled cookies. Decorate with sugars, if desired. .

These have been a hard cookie to rate as there are some parts that are great, others not so much. I can't say this very often, but I followed the ingredients exactly. I found the dough to be very soft and sticky, even after chilling overnight, and no matter what method I tried, I couldn't get it to roll out without making a mess. I ended up rolling the dough into small balls, placed a piece of floured wax paper over the ball and pressed with a cup. The dough, uncooked deserves 5+ stars - it was soooo good, I could hardly stop eating it. The cookies have a nice orangey taste but the texture is odd, I think because of having the egg but no leavening, and it's hard to describe, kind of like a stale sugar cookie. The frosting is very good,though a little sweet, and really makes the cookie. The orange juice made the frosting look curdled. I baked the dough in two batches and added some orange food coloring to the frosting of the second batch , which was nice as the first were pretty plain looking. I'd like to make these again and add some baking powder to see if it would improve the texture. I think a lot of people will like them anyway, especially if they are an orange fan.
