Oriental Chicken Summer Salad

"This is a great salad to make for a lunchbox. The ingredients are simple so most people would have these on hand & it is nice & filling & full of goodness. I've also made this with tuna which is great."

  1. Pretty good light meal. I added green onions, eggplant (because I had it on hand), and traded chives for cilantro (also because I had it on hand).
     
  2. A great way to use leftover rice and/or chicken. It's light, yet filling. I used a green bell pepper instead of red and also added some chopped red onion. I would add some garlic to the dressing next time and add some more cucumber. Thanx for posting this..... it's a keeper!
     
  3. Oh, my is this delicious! I used some left over grilled chicken with this and added a bit more cucmber (because I love it). also used grape (or cherub) tomatoes instead of chopped. Other than that I followed the recipe. I used brown rice since it didn't say which and it is my fav. I love this - the dressing is lovely - I will make this AGAIN FOR SURE!! **MADE FOR BEVY TAG 2008**
     
  4. I made this for my lunch today and it was great. I used leftover chicken and rice I omitted the corn and added some sugar sanp peas. Great filling lunch. Will definately make this one again. I always seen to have a little dab of chicken or rice leftover.
     
  5. Enjoyed the crunch of this salad with the rice and chicken. The dressing was very good and complimented the salad nicely. I love chives so sprinkled liberally and had a very nice lunch on a warm day.

Melbourne I live on a 5 acre property in the Dandenong Ranges Victoria, Australia, having moved from the burbs when I became pregnant with my now 15 year old daughter Alyssa. Once my daughter was born I became a stay at home mum as I couldn't bear the thought of putting her in daycare. She is the light of my life, I never imagined myself as a mum when younger but now wouldn't have it any other way. Alyssa was made a big sister on the 19th April 2010 when our cheeky little boy Blake was born. I love cooking and experimenting with new recipes so quickly become addicted to Zaar as it was previously known & still use it regularly. In addition to being my kids taxi :lol: I also spend my time, reading, gardening and of course shopping. I'm lucky enough that we have the space & so love growing our own fruits, vegies & herbs, this also means we have plenty of room for animals & at the moment have 2 dogs, Max, a Jackshund who's 6, Fletcher, a Kelpie who's 4, 6 cats Snowpea, Fergus, Ginger, Tango, Annie & Cookie, 4 chooks & 2 Ducks. As well as our pets, we also have a lot of native animals around our area, we have kangaroos, wombats, echidna's, possums as well as rosella's, galah's & Cockatoo's hence the name of where I live..
