- 8 ounces pad thai noodles
- 2 eggs
- 3 chicken breasts
- 1 cup cilantro
- 3 green onions, sliced
- 1⁄2 cup peanuts, chopped
- 3 tablespoons soy sauce
- 1 tablespoon sriracha sauce
- 2 tablespoons lime juice
- 2 tablespoons canola oil
- 2 tablespoons brown sugar
directions
- Cut up chicken into bite sized pieces and pan fry in oil.
- Cook pad thai noodles according to package directions.
- Whisk together soy sauce, sriracha, lime juice, canola oil and brown sugar. Set aside.
- Scramble eggs in with the chicken.
- Combine noodles, eggs, and sauce. Top with cilantro, green onions and peanuts.
