Peanut Butter Energy Bites

"A parent made these for a shared snack for kids at school, and everyone gobbled them up (kids and teachers). They are very easy to make (kids are great at helping mix and form the balls), and any nut butter can be substituted with no problem."

  • 1 cup nonfat dry milk powder
  • 1 tablespoon chia seeds
  • 2 tablespoons wheat germ
  • 12 cup finely chopped dried dates
  • 12 cup finely chopped dried apricot
  • 1 cup natural-style peanut butter
  • 12 cup honey

  • Whisk the powdered milk, chia seeds and wheat germ together.
  • Mix in the dates and apricots and stir until well coated.
  • Add in peanut butter and honey and mix until combined (easiest with hands).
  • Form into small balls (mine were about 1/2-2/3 the size of a golf ball).
  • Store in an airtight container in the fridge for up to a week.
