  • Cooke vegetables until tender.
  • Salt pasta water well, cook noodles until tender, do not rinse and save 1/2 cup pasta water.
  • Whip eggs through dijon.
  • Put HOT noodles in a large bowl.
  • Pour egg mix on noodles and put your cheese slice on top.
  • Put HOT veggies on top and mix everything together.
  • Add reserved pasta water, little at a time.
  • Let sit for a minute, then eat.
  • Important: pasta must be very hot in order to cook your eggs.
