  • Heat oil in large saucepan over medium-high heat. Sauté onion and chorizo until onion has softened, 2-3 minutes. Add garlic and rice, stirrirng to coat rice in oil. Stir in tomatoes and broth and bring to a boil. Reduce heat, cover and simmer until all the liquid is absorbed, about 15 minutes.
  • Remove from heat; gently stir in black beans and corn. Cover and let stand 5 minutes. Garnish with green onions.

  1. Super easy to make. Used brown basmati rice, which took about an hour to cook. Just be warned that it may take a long time to cook if you don't use basmati rice that cooks in 15 minutes! So you will have to modify your cooking times accordingly.

Her sweets are fantastics, especially her pound cakes, Yummm <br> <br>I guess the dish that I am famous for is my Christmas ham - my family all comes home for Christmas, and if i don't have my ham they are dissapointed, and my grandson wants the pistachio squares!!! so I guess that is the dishes that I'm famous for.
