Quick Sour Cream Coffee Cake

1 coffee cake
ingredients
- 1 1⁄2 cups flour
- 1 cup sugar
- 2 teaspoons baking powder
- 1⁄2 teaspoon baking soda
- 1⁄4 teaspoon salt
- 1 cup sour cream
- 2 eggs

Streusel
- 2 tablespoons flour
- 2 tablespoons butter
- 5 tablespoons sugar
- 1⁄2 teaspoon cinnamon
- 1⁄4 cup chopped nuts (optional)

Prepare streusel topping:
- With fork, combine flour, butter and sugar till crumbly.
- Add cinnamon. Set aside.

Coffee Cake:
- Preheat oven to 350.
- Combine flour, sugar, baking powder, baking soda and salt.
- Combine sour cream and eggs. Beat well.
- Add the dry ingredients to the cream mixture. Beat just till smooth as overbeating tends to toughen dough.
- Spread in a lightly oiled 9x9 pan.
- Sprinkle with streusel (and nuts if desired).
- Bake about 30-40 minutes at 350, or till tester comes out clean.

This recipe was the first one that I tried from Joy of Cooking book. After hearing people praising the book, my expectations were very high, I guess. I agree with Aunt Cookie. It did take 55 mins for me to bake this cake. I even raised the temp. to 375 in the middle. It was moist and good, considering the time that I spent to prepare(5 mins!), but it was less sweet than I thought it should and smelled like an egg(I should've known when recipe called for two eggs and no vanilla extract..). Next time I will try with more sugar and 1t of vanilla extract.

Tis was a good recipe. I have company coming today, coffe cake sounded perfect, but i didnt want just a plain square coffee cake in the pan so i used a greased round pan and put the topping in the bottom, when it was done i inverted it onto my cake plate and sprinkled with powdered sugar, Perfect!!! thank you for sharing

I’ve used this recipe for years and can’t believe I’ve not reviewed it!!! This is a simple yet delicious coffee cake!! This is the one you whip up at the last minute when you find out you need to serve a delicious treat for pop in guests!!! But by all means whip one up at any time you want something special to share with DH just because or want to treat the neighbor! We had a very old friend that was delighted when I’d pop in with this cake in tow. So if you want a delicious treat that’s easy peasy to make yet delicious, try this one! You simply can’t go wrong!!!

Still eating my first piece, warm from the oven! Love it. Very different texture, must be the sour cream. I used an 8" sq pan, and it took a good 45 min to cook. I would do that again next time as the height of the Cake was perfect. I reduced the sugar in topping to 4 tbl (demarra), and to 3/4c in the Cake. I added almost 1 tsp of cinnamon instead of 1/2 tsp, and almost 1/2c toasted pecans to the streusel topping. Will definitely make again!

what a fantastic coffee cake! My family loves it and I love it because it's so quick. I baked it in a 9x12 glass pan and it came out perfect! <br/><br/>I also doubled the recipe (tripled the streusel!!) and placed it in my big size Pyrex. I also used 1/2 white 1/2 brown sugar and a bit of vanilla in the cake to give it a little ooomph. YUMMMM<br/><br/>edited 04/04/13: Used 1 cup of plain, non-fat Greek yogurt instead of sour cream. WOW! Light and fluffy cake!! I will do this every time from now on!

The first time I ever set foot on California soil (or anywhere in the West, for that matter) was the day I moved here. I experienced a form of culture/environment shock for about a year - even the air is different out here! For the first year, I would look at the roads and driveways that wind steeply up and down the foothills and think, Man, how does anyone drive on those in the winter? Then I would remember - they do it the same way they do in the summer - with their windows down, wearing shorts and flip-flops. I love the fact that we are near a large city, near the ocean, near the desert, near the mountains - what more could I ask for? And yes, even though I swore it wouldn't happen to me after living for more than 40 years in places with many weather extremes - I now get chilly when the temperature dips below 70 and can barely bring myself to go outdoors if it's raining. However, I do NOT wear a parka and mittens when it's 65 degrees - a sweatshirt or light jacket will do. <br /><br />My husband and I met while attending seminary (I dropped out before finishing one semester but he got a Master of Divinity) and we got married after knowing each other for 6 months. We are quick to tell other people that we do not advise this course of action, but we celebrated our 27th anniversary this year, so I guess sometimes rash decisions work out quite nicely. So with my husband's MDiv and my undergraduate degree in religious studies, we now both work in pharmaceutical marketing research. Just what you would expect, right? I telecommute to the east coast for work each day; I'm primarily a writer/analyst. When I was in college, writing so many research papers and unable to decide what I wanted to do when I grew up, I used to jokingly say that I should find a job writing research papers. More than 20 years later, that?s basically what I do. Cool, huh? <br /><br />Our wonderful son was born when we were married just one year and a mere 15 years later our bright-eyed redhead came into our lives (okay, so she was totally bald till she was nearly 2, but she's definitely red now). My kids are my best and constant reminder that perfect timing is something determined by God and not by me, since I wouldn't have dreamed up such a family-planning scheme, and yet it works just right for us.
