  • 250 g minced beef
  • 2 teaspoons oil
  • 1 onion, finely chopped
  • 1 tablespoon curry powder
  • 1 cup frozen mixed vegetables (peas, carrot, corn)
  • 1 cup water
  • 14 cup kraft* smooth peanut butter
  • 2 tablespoons sweet chili sauce
  • 16 slices bread

  • Heat half the oil in a non-stick frying pan over high heat and cook beef until browned, then remove. Heat remaining oil in pan and sauté onion.
  • Stir in curry powder, then return beef to pan along with peas, water, peanut butter and sweet chilli sauce. Reduce heat and simmer, uncovered, for 10 minutes.
  • Place heaped tablespoons of mixture onto 8 bread slices and top with remaining bread. Cook sandwiches in a greased jaffle iron for 3-4 minutes until golden and crispy. Serve.

I live in Keilor Downs, Victoria in Australia. I am a receptionist in Melbourne. My favorite cook books are anything Weight Watchers or Simply 2 good 2 be true also any muffin or scone cook books. I love cooking easy stuff but I love a challange ocasionaly on the weekends when i have a bit more time. My pet peeve is how much capsicum/bell peppers are in recipes now as i am elergic to them.
