- 1 lb Polish sausage (kielbasa)
- 3⁄4 cup onion, chopped
- 1 clove garlic, minced
- 2 (16 ounce) cans stewed tomatoes
- 4 cups beef broth (I use beef bouillon and water)
- 1⁄4 cup uncooked barley (not quick cooking kind)
- 1⁄2 cup uncooked lentils
- 1⁄2 teaspoon salt
- 1 teaspoon dried basil
- 2 cups diced potatoes
- 1 cup sliced carrot
directions
- In large pot, cook sausage and onions until onions are soft.
- Add all other ingredients and bring to a boil.
- Reduce heat and simmer soup, covered, about an hour or until potatoes and carrots are tender.

This was a hearty and tasty soup. I removed the sausage from the casings and browned with dried minced onions (bcz of kids). I used 2 garlic cloves, diced tomatoes, 1 C beer and 3 C chicken broth. It makes a lot. Next time I will try it without the beer and see how it tastes, as the beer was a noticeable flavor.

I agree with PCrocker: this is a really hearty soup. I ate it on a NOT so chilly night and it was still delicious! But I agree: great cold weather food! I made the recipe unchanged except for halving the salt and adding 4 cloves of garlic and 1 teaspoon of dried thyme. And because of personal taste preferences, I made two substitutions: I used sodium reduced chicken broth and instead of the Polish sausage I added my Pork, Mushroom and Soy Sauce Meatballs #120300, which I always have some of in the freezer. This also speeded up the preparation time! I sautéed the onion and garlic together – about 5 minutes – added the other ingredients, then left the soup to simmer largely unattended for about an hour and a half. It probably didn’t need that extra half hour. I just always tend to simmer my soups for a bit longer than the recipe has stated. Very tasty! Thank you, PCrocker!
