Scampi-Style Garlic Gorgonzola Potatoes

"Ready, Set, Cook! Special Edition Contest Entry. You could call this "Everything But the Kitchen Sink Potatoes". This is the way we like to cook with what we love and what is in the fridge. Depending upon what's available, this could be a meal in itself or a side dish with chicken or fish sharing the menu. It's easy to throw together and many items can be easily substituted if you're missing one ingredient. It can become a "drunken potato casserole" by substituting wine or beer for the chicken stock."

  • 1 (20 ounce) package Simply Potatoes® Shredded Hash Browns
  • 2 cups Italian cheese, shredded
  • 5 ounces gorgonzola, crumbled
  • 1 bunch green onion, diced
  • 12 cup sun-dried tomato, diced
  • 12 cup bacon, fried until crisp
  • 12 cup corn, canned
  • 1 tablespoon dried thyme, crushed
  • 1 tablespoon cajun seasoning, such as Tony Chachere's

  • Heat oven to 350 degrees F. Spray a 2 quart glass casserole with nonstick cooking spray. In a large bowl combine all hash brown ingredients and mix well. Let stand while you prepare scampi-style sauce.
  • In small saucepan over medium low heat, combine 1/4 cup butter, 4 oz. goat cheese, 3 T. minced garlic, 1 cup chicken stock, 1 cup heavy cream, and lots of white pepper until well mixed and slightly bubbly.
  • Pour this mixture over potato mixture and stir well.
  • Spread into prepared baking dish and, if desired, top with 3/4 cup flavored bread crumbs spreading evenly.
  • Bake for 50 minutes.
  • Enjoy.
