Scampi-Style Garlic Gorgonzola Potatoes

“Ready, Set, Cook! Special Edition Contest Entry. You could call this "Everything But the Kitchen Sink Potatoes". This is the way we like to cook with what we love and what is in the fridge. Depending upon what's available, this could be a meal in itself or a side dish with chicken or fish sharing the menu. It's easy to throw together and many items can be easily substituted if you're missing one ingredient. It can become a "drunken potato casserole" by substituting wine or beer for the chicken stock.”
