Slow-Cooker Roasted Beets

10 beets
ingredients
- 10 -12 medium beets, well scrubbed
- aluminum foil
directions
- Wrap each beet in aluminum foil.
- This number of beets fit comfortably in a 6 qt slow cooker.
- Set to High and cook for 3 to 5 hours. Test by piercing one of the larger ones for doneness.

Ok the beets cooked perfectly but the crock pot blowup. Not sure what happened but at the three hour mark I heard a loud cracking pop and Ahhh my crock pot had cracked (have never seen or even heard of one splitting like this during cooking. Anyway the beets were fine and were made into a nice beet salad. A quick note do not worry about peeling them as I was so upset about the crock pot I just started slicing and the skin just slid right off the slices. Thanks so much for the post.

Tastes great! Love beets! Appreciate technique so I could do other stuff. Easy and skins peeled off very fast. And better yet, my crockpot is fine. :) I did line it and glad as some juice escaped. Mine took longer but that was with dh deciding if they were tender or not-who knows? He said 6 hours and they varied in size from baby to 2 inches in diameter. Thank you duonyte.

My screen name is a diminutive in Lithuanian for bread, so you won't be suprised to learn that I love to bake bread. In recent years I have been baking a lot of sourdough breads and have several starters sitting in my refrigerator. But I like to cook a lot of other things, as well, especially from various cultures.
