Directions

  1. Heat oil in large non-stick skillet.
  2. Add onion, peppers, mushrooms, salt and pepper to taste and sauté. Remove while still firm (do not over cook).
  3. Grease 9x13 pan, layer in pepper onion mixture, cheese, and ham.
  4. Beat together Eggs, Soy milk, hot pepper sauce, salt and pepper. Pour over Pepper mixture.
  5. Bake at 350° F for 25 to 30 min, or until done.
