- 1⁄3 cup cream cheese
- 2 tablespoons powdered sugar
- 1⁄3 cup butter, softened
- 2⁄3 cup packed brown sugar
- 1 egg
- 1 teaspoon grated orange rind
- 2 cups flour
- 2 teaspoons baking powder
- 1⁄4 teaspoon salt
- 2⁄3 cup milk
- 1⁄3 cup strawberry jam
- 2 tablespoons pecans, fine chopped
directions
- Preheat oven to 375ºF.
- Blend cream cheese with icing sugar; set aside.
- In a separate bowl, cream together butter and brown sugar; beat in egg and orange rind.
- Combine flour, baking powder and salt; add to creamed mixture alternately with milk, stirring until just blended. Do not overmix.
- Spoon into large greased or paper-lined muffin tins, filling halfway to top. Add 1 teaspoon of cream cheese mixture and 1 tsp of jam to each; top with remaining batter. Sprinkle with nuts.
- Bake for 25-30 minutes or until firm to touch. Remove immediately from tins.

I am 36 years old and the mother of four wonderful children. Two girls and two boys. ?Being a stay-at-home mom affords me ample time to indulge my passion for cooking and baking! (Thanks again to my wonderful husband!) My oldest daughter loves to help in the kitchen and wants to eat what she cooks, so that's helping broaden her eating horizons! My youngest daughter is still pretty picky, but we're dealing! Thank goodness my husband is gracious enough to eat whatever I cook. (I guess he knows that if he complains, he'll be asked to do the cooking himself!!)
